Ancho Chicken Tacos with Cilantro Slaw and Avocado Cream

This recipe sounds and looks tasty. On my list to try so I will update this post with my thoughts and recommendations at a later time.

  • 1 lb skinless, boneless chicken breasts, cut into 1/4″ strips
  • 3/4 tsp ancho chili powder
  • 1/2 tsp garlic salt
  • 1/4 tsp ground cumin
  • olive oil or cooking spray
  • 1/8 tsp grated lime rind
  • 2 tbsp 1% milk
  • 1 ripe avocado, diced
  • 2 cups packaged angel hair slaw
  • 1/2 cup thinly sliced green onions
  • 1/4 cup fresh cilantro
  • 1 tbsp canola oil
  • 1/4 tsp salt
  • 8 (6 inch) corn tortillas
  1. Heat large skillet over high heat. Sprinkle chicken evenly with chile powder, garlic salt, and cumin. Coat pan with cooking spray. Add chicken to pan; cook 4 minutes, stirring frequently. Remove chicken from pan.
  2. Combine rind, 1 tbsp juice, and next 3 ingredients (through avocado) in a blender or food processor; process until smooth.
  3. Combine remaining 1 tbsp juice, slaw, onions, cilantro, oil, and salt, tossing to coat.
  4. Heat tortillas according to directions. Divide chicken mixture evenly among tortillas. Top each tortilla with about 1 tbsp avocado mixture and 1/4 cup slaw mixture.

(Serves 4 – 2 tacos each)


Chicken and Creamy Spinach Enchiladas

This is a really great twist on traditional chicken enchiladas. I really enjoyed it. The recipe was found on Frontera’s website compliments of Chef Rick Bayless.


  • 2 fresh poblano chiles
  • 1 cup (lightly packed) roughly chopped spinach leaves
  • 2 cups milk
  • 2 cups chicken broth
  • 6 tbsp (3 oz) butter – or you can use vegetable oil
  • 3 garlic cloves, peeled and finely chopped
  • 1/2 cup flour
  • salt and pepper to taste
  • 3 cups shredded cooked chicken (rotisserie or grilled chicken is great)
  • 12 corn tortillas
  • vegetable oil for brushing or spraying
  • 1 cup mexican melting cheese, monterey jack, brick or mild cheddar
  • chopped cilantro for a garnish


  1. Make the sauce. Roast the poblanos directly over a gas flame or on a baking sheet 4 inches below a very hot broiler (we grilled ours), turning regularly, until the skins have blistered and blackened on all sides, about 5 minutes for an open flame, about 10 minutes under the broiler. Place in a bowl, cover with a kitchen towel and, when handleable, rub off the blackened skin, tear open and pull out the seed pod and stem. Quickly rinse to remove any stray seeds or bits of skin. Roughly chop and put in a blender jar. Add the spinach.
  2. In a medium 3 quart saucepan, combine the milk and broth, set over medium-low heat to warm.
  3. In a large 4 quart saucepan, melt the butter or olive oil over medium. Add the garlic and cook for a minute to release its aroma, then add the flour and stir the mixture for a minute. Raise the heat to medium-high. Pour in the warm broth mixture and whisk constantly until the sauce boils. Reduce the heat to medium and simmer for 5 minutes. Remove from the heat.
  4. Pour half the hot sauce into the blender with the chiles and spinach. Cover loosely (remove the center part of the lid, secure and drape a cloth over the whole thing) and blend until smooth. Pour the mixture back into the saucepan with the remaining sauce. Taste and season with salt, usually about 2 tsp.
  5. Finish the enchiladas. Heat the oven to 350 degrees. Smear about 1/4 cup of the sauce over the bottom of a 13×9 inch baking dish. Stir 1 cup of the sauce into the chicken.
  6. Lay half of the tortillas out on a baking sheet and lightly brush or spray both sides with oil, top each tortilla with another one and brush or spray those with oil. Bake just to warm through and soften, about 3 minutes. Stack the tortillas and cover with a towel to keep warm.
  7. Working quickly so that the tortillas stay warm and pliable, roll a portion of the chicken up in each tortilla, then line them all up in the baking dish. Douse evenly with the remaining sauce and sprinkle with the cheese. Bake until the enchiladas are hot through (the cheese will have begun to brown), about 20 minutes. Garnish with the cilantro and serve without hesitation.

Corn and Black Bean Salad

I made this as a side on my daughter’s 9th birthday dinner. I found it on by Nick.
Wow was it amazing. We all LOVED it!

  • 4 ears of fresh sweet corn, cut off the cob
  • 2 cans of organic black beans, drained and rinsed
  • 1 red onion, diced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 3 limes, juice only
  • 1/4 cup cilantro, chopped
  • 1-2 jalapenos, minced
  • 1 tbsp fresh tarragon, minced (optional)
  • salt and pepper to taste

I love this side as it is so versatile. Eat as a side, in your taco or even with some chips. Whatever way you choose has such a fresh awesome taste…pure love.
